Easy Peasy Really Cheesy Macaroni

Mac n’ Cheese is a firm favourite in our house. Which is good, as it’s so easy to cook from scratch, and usually with things you’ll always have in the house.

I very much make this without measuring anything, so the measurements in the recipe are very rough indeed. This recipe will make two portions. There isn’t as much cheese in the recipe as I would normally put in (even though it is really cheesy!) because I realise not every one is as gluttonous about cheese as I am. I would live in a house made of cheese if it were not for the facts that a) I would stink and b) I would eat my house.

This is a good one to make with your kitchen minions – teach them about mixing neatly and grating safely – no-one likes knuckle relish.

Easy Peasy Really Cheesy Macaroni
Mac n' Cheese is approximately 4563,7656 times better if you make it from scratch. If you are planning on eating it yourself, add lots of seasoning and various extras like chorizo, leeks, ham, bacon...the list is endless. The measurements are really rough - play with them!

Instructions
  1. Measure the macaroni by half filling the pot you plan to cook it in. Put on a pot of water, and then cook macaroni and drain (this can be happening in the background while you make the sauce)
  2. Melt the butter in a saucepan on a medium heat, then mix in the flour til it's smooth. Add the milk gradually, stirring quickly, until you have enough volume. Keep cooking it, it will thicken up nicely. Stir constantly and don't let it boil.
  3. While you do the burny stuff, get a minion to carefully grate some cheese.
  4. Take the sauce off the heat, and mix through the cheese and any other ingredient you fancy (cook it first mind) Minions may like to aid you in mixing the macaroni with the cheese sauce.
  5. Sprinkle some extra cheese on top (seriously, more cheese. No, more.) and whack it under a hot grill until golden and bubbling. Then scoff!

      1. I just made it ( always wanted to know how) although I was really unsure how much milk to put in. It was gorgeous and my son who is a Really fussy eater hate two bowls of it.. personally I would use more cheese next time but that’s probably because I went a bit crazy with the milk.. great recipe, really easy, kids enjoyed helping, dinner made in minutes fantastic. Any more easy ones?

A lovely easy peasy recipe for macaroni cheese – it’s pretty similar to mine, except I always put mine in the oven (because that’s how my mum taught me), but I love the idea of doing it under the grill – a much quicker way of doing it and doesn’t risk the macaroni overcooking before the top is brown. Definitely going to do it under the grill next time and try this out! Thanks for sharing Eb x
