I don’t know about you, but in my mind popcorn has its place. In a paper bag, scattering itself everywhere at the cinema. I recall one especially memorable moment when watching Jurassic Park aged 12 or so, when a Velociraptor jumped out of somewhere and I flung an entire bag over the three rows in front of me. Mother was not amused.
Anyway, I digress. The point I’m trying to make is that popcorn is something I associate with films, not with cooking. So being set a challenge by Butterkist was just that – a challenge. What to make with popcorn? And something that I could make with Rian helping (which put most of my savory ideas out the window – I bet popcorn crusted chicken would be yum) The boy was so excited when the frankly huge box of popcorn arrived – especially seeing as he got his own apron and chefs hat!
I decided in the end to make one of my favourite sweet treats – Rocky Road. I love this because you can put all sorts in it – and why not popcorn? Rocky Road is all about texture and taste – biscuity crunch, soft marshmallow, tangy fruit hits. Adding sweet and salty flavour popcorn takes it an extra step further – the salt really adds a new and delicious dimension.
We had a brilliant time getting all the ingredients together to make the Rocky Road – we chose mixed dried berries and cherries for the fruit, digestive biscuits for the crunch and pink and white marshmallows for the colour and squidgy bits. The boy was very keen on quality testing all the ingredients…and being chief spoon licker of course!
We also made a video of us making the Rocky Road! I appear to have raised a camera hogging, attention loving child…hmm, he must get that from his father!
