Easy Chicken And Chorizo Paella – Classic Comfort Food

This is one of my favourite recipes, quick, easy, delicious. It’s really not difficult to cook quickly and less expensively from scratch if you whittle fancy recipes down to their taste good basics. This easy paella recipe only takes about 40 minutes including cooking time – yum! This is a one pot dish too – I use a big pan with a lid. It’s not a crusty-bottom paella in the purest sense of the word, but that’s what Jamie calls it in his version so there you are!

Ingredients:

  • 2 chicken thighs, skin off and chopped
  • 100g chorizo, chopped
  • 1 onion, roughly chopped
  • 1 carrot, roughly chopped
  • 1 red pepper, roughly chopped
  • 1 tbsp smoked paprika
  • 1 tbsp tomato puree
  • 1 chicken stock cube
  • 300g paella rice
  • 750ml boiling water
  • 100g frozen peas

I find the easiest thing to do when I’m cooking something is to get all the ingredients prepped and lined up before I start. So I fill a bowl with the onion, carrot, chorizo and chicken then I chuck it in a hot pan with a good slug of olive oil (though any sort will taste nice enough) Stir through the smoked paprika and fry for 5 minutes, stirring as you go.

Once everything is looking a nice colour, whack in the chopped pepper and give it another 5 minutes.

Stir in the tomato puree and crumble in the stock cube, and give it a mix before adding the paella rice. Give it a really good stir through to let it soak up all the lovely flavours then add the boiling water.

Bring the mix to a simmer, and pop the lid on and let it cook for 15 minutes, giving it a stir now and then to stop sticking. After the 15 minutes, add the frozen peas and cook for a further 5 minutes. I think you can add prawns as well at this stage if that’s your bag, or some chopped herbs.

This recipe makes enough for three or four generous meals – we tend to have it one night and then there is enough left over for my lunch the next day and some for Rian’s dinner too – he loves this. You won’t need to add any extra salt, but I like to serve it with lots of freshly ground black pepper, and if I’m in the mood, I go totally off script and mix some cheese through as well, because I’m gross like that.

  1. That looks great and quite simple too. I’m all for stripping great dished down to a few of the best components, and it certainly saves messing-around with all the shellfish!
