Homemade Wagon Wheels (AKA Whoopie Pies)

I’ve been meaning to make these for a while now – my friend Anna made them ages ago, and the name – whoopie pies – made me laugh because I am a child. Now that I’ve made them though, I think they taste more like homemade Wagon Wheels!

The recipe is nice and straight forward, with the usual suspect baking ingredients that you might already have at home, except for buttermilk, which I imagine most people won’t just have hanging about. I’m not sure what it specifically adds to the recipe. You can actually make your own if you don’t want to buy any – a tablespoon of lemon juice in a measuring cup topped up with milk and left for 5 minutes will make buttermilk. Or white vinegar works too.

Ingredients:

  • 255g plain flour
  • 170g cocoa
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 75g softened butter
  • 130g brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 130g buttermilk
  • 7 marshmallows

Instructions: 

Heat the oven to 170C and line two baking trays with baking paper.

Put the dry ingredients in one bowl and mix them up, then cream your butter and sugar in another bowl.

Add the vanilla and the egg to your sugar mix, then fold in half the dry ingredients. Mix in the buttermilk, then the rest of the dry ingredients.

I then used a piping bag to make little 5cm splats, but I reckon a tablespoon of mix would be the same – flatten it a little though. This mix should make about 14 splats – give them room to spread a bit (yes, yes I KNOW what they look like!)

Bake for 8 minutes, then cool on a wire rack.

Once cool, turn on your grill to hot and turn half of the pie’s flat side up and put a marshmallow on top. Grill them until the marshmallow is just starting to golden, then take out and squidge down with the other sides – cakey gooey deliciousness, hurrah!
