#ThankGoodness Dolmio Challenge

The #ThankGoodness Dolmio Challenge landed on my doorstep last week in the form of a bag or two full of lovely grub. The challenge is to make a delicious family meal using everything and any thing, using a jar of Dolmio bolognese sauce to tie it all together.

I could have made a classic Spag Bol, but I decided to make something else up from scratch.

I started off by disguising some veg. Usually I would roast this veg, and then blend it for the extra flavour, but that does add some additional oil, so in the name of health, I decided instead to grate 2 carrots and a courgette, and try and finely chop an onion.

I then sweated the veg down in a frying pan before adding the Dolmio sauce. I’ve been told that in each jar, you’ll find at least 10 juicy diced tomatoes, a dollop of tomato puree, half an onion, a tablespoon of sunflower oil, a couple of cloves of garlic, a handful of herbs including basil, a teaspoon of cornflour, a teaspoon of salt, a pinch of pepper, two teaspoons of added beet sugar for taste, a squeeze of lemon juice, a splash of water and nothing more. In fact, a jar provides a family of four with one of their 5-a-day each and that’s before you add any further veg to the meal. The sauce was looking pretty tasty at this point. I was going to serve it mixed through pasta, but then decided to utilise my new grill instead and so bashed some chicken breasts out and grilled them before adding the sauce on top, and serving with some homemade wedges.

I’m afraid I do not have any pictures of the final creations, because we scoffed them before I remembered to take them…here is one of said sauce though, it was really tasty and texturally more interesting than your usual topping. The boy figured out there was veg in it and at first whined and refused to try it, but then accidentally ate some and decided it was in fact, delicious and cleared his plate. Cheers Dolmio!

Our latest addition to the family was most upset to not get any of the chicken left over…because there wasn’t any!
