Sneaky Veg Sauce
This is a slimming world and family friendly recipe for tomato sauce (or if you are a grown up it’s an oven baked ratatouille!) You can put pretty much any veg you desire into it, the more the tastier. This is the basic, most sneaky version. You will need a blender!

  1. Pre-heat the oven to 180 degrees, and get your ingredients together.
  2. Prep your veg as per ingredients list and spread over a sprayed baking tray.
  3. Give the veg a good shake, and pop in the oven. Check on it after 10 and 20 minutes and keep shaking so it doesn’t stick or get burnt.
  4. Once all the veg is looking deliciously golden, tip the tomatoes on top, and mix well. If you have any, some fresh basil mixed through is a really tasty addition. Bake the mix for another 10 minutes.
  5. While that is baking, chop your chorizo and dry fry it. Put the pasta on to cook.
  6. Once the veg sauce is baked, take out a portion for the littles and pop it in the blender (or food processor, or use a hand blender – just watch out for splats!)
  7. Mix your sauce with the chorizo and pasta, and use the separate whizzed portion for your anti-veg small people. Enjoy!
