Chocolate and Hazelnut Cookies

I love making cookies, it’s such a quick sugar fix! These ones follow a classic recipe, with some chopped hazelnuts added in.

You’ll need:

  • 150g soft salted butter
  • 80g light brown sugar
  • 80g granulated sugar
  • large egg
  • 225g plain flour
  • 1/2 tsp bicarb
  • 200g plain chocolate (I like to chop up a bar rather than use chip, extra gooey bits hallo)
  • 100g hazelnuts

Here’s how you make yourself about thirty yummy mouthfuls:

  • Heat the oven to 180′ and line two baking trays with parchment
  • Mix the butter and sugar until creamy (I use an an electric mixer)
  • Add and whisk in the egg (if you like super sweet you can add some vanilla extract at this point – about 2 tsp)
  • Sift the flour and bicarb into the bowl and then mix up with a wooden spoon
  • Mix through the chocolate and hazelnuts
  • Use a teaspoon to shape balls of dough and plop them on the baking trays
  • Bake for 8-10 minutes until firm on edges but still squidgy on the top
  • Cool for a few minutes on the tray then transfer to a rack
  • Scoff
