I love making cookies, it’s such a quick sugar fix! These ones follow a classic recipe, with some chopped hazelnuts added in.
You’ll need:
- 150g soft salted butter
- 80g light brown sugar
- 80g granulated sugar
- large egg
- 225g plain flour
- 1/2 tsp bicarb
- 200g plain chocolate (I like to chop up a bar rather than use chip, extra gooey bits hallo)
- 100g hazelnuts
Here’s how you make yourself about thirty yummy mouthfuls:
- Heat the oven to 180′ and line two baking trays with parchment
- Mix the butter and sugar until creamy (I use an an electric mixer)
- Add and whisk in the egg (if you like super sweet you can add some vanilla extract at this point – about 2 tsp)
- Sift the flour and bicarb into the bowl and then mix up with a wooden spoon
- Mix through the chocolate and hazelnuts
- Use a teaspoon to shape balls of dough and plop them on the baking trays
- Bake for 8-10 minutes until firm on edges but still squidgy on the top
- Cool for a few minutes on the tray then transfer to a rack
- Scoff
